Mrs. Simon's Keflies

First day:
6 cups flour
1 pound cold butter, no substitutes
1 dozen egg yolks; whites will be used later
1 grated lemon rind
1/2 pint of half-and-half
Mix with hands until crumbly, flour and butter; add yolks, rind and half-and-half. Mix well and put out on floured board and knead 10 minutes. Pinch off walnut-sized pieces and roll into balls. Refrigerate over night.
Next day:
3 pounds ground fine walnuts
2 dozen egg whites
2 one-pound boxes powdered sugar
juice of 2 lemons
Beat egg whites stiff; add powdered sugar gradually; fold in nuts and lemon juice.
Roll dough ball tissue thin; heap 1 tablespoon egg white mixture on; fold over and shape into crescent shape.
Bake about 12 minutes at 350 degrees or until lightly brown. Remove from cookie sheet onto linen dish towel or bath towel and cool. Sprinkle with powdered sugar and enjoy. Do not store in air tight container unless you are freezing them.

In order to make these cookies with just the right flavor, you'll need to learn just enough Hungarian that you can use it to scold anyone who disturbs your cookie making.

When I was growing up in a small factory town in Indiana, there was one woman whose back door I always used, from the time I was a little girl. She was a special lady, and it is not only relatives who have an influence in our lives. This recipe is from the lovely lady who was "the lady next door" when I was growing up. Her mother was a friend of my grandfather, and her daughter was my best friend as I grew from crayons to Chanel No. 5. For special occasions, this beautiful woman made keflies (a.k.a. kifflies, or kefflies). These are cookies, but the word "cookie" doesn't do them justice. My neighbor was Hungarian, and she got the recipe from her mother, Mrs. (Helen) Simon. I got the recipe from the neighbor lady's daughter, my friend, who used to wait for me on the other side of the concrete wall by the creek.
